Alison's Birthday Breakfast 

We hope you enjoyed your breakfast celebration of Alison's birthday. 

A few of you mentioned how much you enjoyed the pancakes, so we have reproduced it here for those who may like to try it for yourself. Not all of the photo's that I took came out well, or were not very complimentary to some of you so I have avoided adding these to this site!

Blueberry Pancakes 

200g/7oz Self Raising Four

1 tsp Bicarbonate of Soda

25g/1oz Castor Sugar

1 Egg

50g/2oz Unsalted Butter, melted

250ml/9fl oz Milk

125g/41/2oz Cottage Cheese

225g/8oz Blueberries

Zest of 1 Lemon

Vegetable oil for frying

Maple Syrup, to serve

Serves 4-6

  1. Mix the flour, bicarbonate of soda and sugar together in a bowl
  2. In a separate bowl, combine the egg, melted butter, milk and cottage cheese, then stir into the flour mix. Beat lightly until well blended
  3. Place two tablespoons of the mixture into a lightly oiled warm frying pan or skillet, then place 4-6 blueberries on top. Cook for 1 minute on each side, until golden. Continue to make pancakes in the same way with the remaining mixture
  4. Sit a few pancakes in a stack and drizzle maple syrup over the top.
Lovely served with crisply cooked streaky bacon
